Mondays are for roasting chickens in my house. ?Most of the time it?s a whole chicken (sometimes just the breasts ? see my quick recipe below). I?ll roast on Mondays and we have it for dinner that night. The rest is ?featured again? later in the week (don?t tell my husband ? he hates leftovers).??Often, round two of the roast chicken becomes taco night or quesadillas con pollo, but if there?s enough I?ll make chicken salad.

I love chicken salad. It?s pure comfort food? a surge of protein with a mayo chaser, what?s not to love? Here?s my latest take on this classic, inspired by the green spring onions and basil in my garden. The Mediterranean twist is so satisfying, fresh, light and totally delicious. I?m hosting a luncheon here soon and you can be sure this will be on the menu.

Mediterranean Chicken Salad

?

Salad:

2 cups roasted chicken breast (see below for recipe)

1 cup chopped celery

1/4 cup green onions

1/4 cup toasted pine nuts

1/8 cup chopped basil

Dressing:

1/4 cup mayo

2 tablespoons sour cream

1 tablespoon lemon juice

1/8 teaspoon red chili flake

1/2 tsp salt

Garnish:

Sea salt

Small basil leaves

Mix the ingredients for the dressing in a medium bowl and combine it with the salad ingredients. ?Serve immediately or store in the fridge until you are ready to eat. ?Right before serving garnish with a sprinkle of sea salt and some small basil leaves.

Easy Roasted Chicken Breasts?

I love the flavor of these chicken breasts. ?For chicken salad I bake the breasts with the skin on. When they are cooked through I peel the skin off and then pull the meat off the bone. The result is super succulent meat that is tasty and easy to dice.

Preheat oven to 375

2-4 chicken breasts split with skin and bones

2-3 tablespoons olive oil

Salt & pepper

?

Place the chicken breasts on a cookie sheet and splash olive oil on each of the pieces ? cover evenly. ?Then sprinkle your desired amount of salt and freshly ground black pepper.

Roast for 40 minutes.

Note: I usually roast 4 breasts at a time so I have leftovers. ?Two breasts will yield what you will need for the chicken salad.

Perhaps offer it at a nominal cost to registered members and free to those willing to join your site, providing you with valuable contact information to mine later on!

And don?t underestimate the power of social media. Create a Facebook page and a Twitter account for your book and deliver reviews, notices and interesting tidbits daily if possible.

Writing Your E-book

Do you write a blog? Contribute guest articles to websites? Send out a newsletter? If so, you?ve already got the makings of your first e-book. Many e-books ? as well as many traditionally published books ? are simply a reprinting of past blogs or articles, kind of a ?best of? series. Excerpts from newsletters will work, too.

If you don?t currently have the body of work to draw from, you can work in reverse and start your blog with an eye toward publishing your first e-book in perhaps six months to a year, depending how frequently you post new material.

Another approach is to select a topic related to your business. Say you?re a website designer. You might create an e-book entitled something along the lines of ?10 Things You Should Know Before You Build a Website.?

If anyone knows what to be aware of when designing a site, it?s you, right? What if you?re a caterer? Your e-book could offer tips for entertaining or information on how to plan a large party or event. You don?t have to give away the store to entice readers, but you should offer valuable information and insights worthy of an expert in your field.

And if, like so many people, you?d prefer a root canal rather than face a blank page on your computer, no worries. You can hire well-credentialed freelance writers through sites like elance.com and odesk.com, and others. These sites offer you access to a wide variety of creative professionals including writers, graphic designers, illustrators, even proofreaders. (And yes, ask to see past samples before you take the plunge with anyone!)

Of course you will have to give the people you hire information and guidance until the content meets your approval; they may be talented, but that doesn?t make them omniscient.

The Publishing Process

When you think of books these days, most people?s first thoughts are Amazon and Barnes and Noble. And rightfully so. In May 2011, the New York Times reported that online bookseller Amazon was now selling more e-books than hardcover and softcover books. Not surprisingly, Amazon.com and Barnesandnoble.com are publishing most of them as well.

While there are other publishers out there, a quick check of the online publishing arms of either of these giants will give you a good working knowledge of what?s required, how long it will take and how much it will cost. You can also look into having them sell your e-book for you, another bit of business-enhancing credibility: ?I?m a published author and my book is available through Amazon.com.?

Important Note: Before you submit your manuscript anywhere, be sure you own all the publication rights. That means carefully reviewing any agreements you made with anyone who may have contributed to your book. If you don?t have full rights and you go ahead and publish, you might end up on the wrong side of a lawsuit.

The Final Chapter

E-books offer myriad benefits that traditional books don?t. E-books are easy to give or sell to customers. You don?t have to keep boxes of inventory in your garage, and you don?t have to pay shipping costs. Customers can download e-books even while you?re sleeping or on vacation.

You can offer e-books for free. If you try to offer traditionally published books for free, you?ll still be responsible for printing and shipping costs. Depending on how you choose to publish your e-book, you may still pay some up-front costs. But the files themselves cost you nothing to print or ship, and you can share as many as you want.

Anyone can publish an e-book in a short amount of time. Traditionally published books can take years to be ready, but many of today?s self-publishing packages are inexpensive and can be done on your own timetable.

MIT's Brainput reads your mind to make multi-tasking easier

With so much information readily available at our fingertips, a multitude of devices to access it from and an increasing outside demand for our divided attention, it's easy to short-circuit on the productivity front. But there's a bright spot on the horizon as emerging research out of MIT is poised to help offload the burden shouldered by our overtaxed grey matter with a much needed and intuitive assist from human-robot systems. The Brainput project -- as the collaborative effort is known -- combines near-infrared spectroscopy (fNIRS) with an input system designed to read changes in a user's brain state and translate those signals into an adaptive multi-tasking interface. Sounds like heady stuff, but if successfully implemented into high-stress environments like air traffic control, the low-cost, experimental tech could go a long way to boosting individual performance and reducing overall stress levels. For now, the team still has a ways to go before the system, presently capable of interpreting three distinct mental states, could make its way into end user applications. Intel caught out using cheap thermal paste in Ivy Bridge?

For all the good stuff it brings, Ivy Bridge has also been running a little hotter than reviewers and overclockers might have liked -- and that's putting it mildly. A few weeks back, Overclockers discovered a possible culprit: regular thermal paste that sits between the CPU die and the outwardly-visible heatspreader plate. By contrast, Intel splashed out on fluxless solder in this position in its Sandy Bridge processors, which is known have much greater thermal conductivity. Now, Japanese site PC Watch has taken the next logical step, by replacing the stock thermal paste in a Core i7-3770K with a pricier aftermarket alternative to see what would happen. Just like that, stock clock temperatures dropped by 18 percent, while overclocked temperatures (4GHz at 1.2V) fell by 23 percent. Better thermals allowed the chip to sustain higher core voltages and core clock speeds and thereby deliver greater performance. It goes to show, you can't cut corners -- even 22nm ones -- without someone noticing, but then Apple could have told you that.

AT&T stops offering Xbox 360 U-verse bundle until it can deliver an updated version

In a relatively strange fashion, AT&T's quietly pulled the plug on its U-verse kit for the Xbox 360 -- at least for the time being. According to a note on its own site, the company's taking some time to focus on "improving and enhancing" its U-verse bundle. This is probably a reference to the updated app (that would also require XBL Gold) AT&T promised for the new dashboard with Kinect support and a new UI, but has yet to deliver. As Multichannel points out, earlier last week Netflix had filed a complaint with the FCC, claiming that AT&T's U-verse on Xbox violated network neutrality regulations -- though, it's unclear whether this had anything to do with the outfit's decision to suspend the service. AT&T has said the set-top kit won't "be available until the new enhancements and functionality are added," so we'd recommend not holding your breath for too long.

Visualized: 121-megapixel satellite photos show Earth in glorious, psychedelic detail (video)

We're starting to think the Russians have an inside track on high-resolution space photos. When Nokia's 41-megapixel photo of Earth's horizon was just a twinkle in the 808 PureView designers' eyes, the Russian Federal Space Agency had long since finished taking 121-megapixel photos of the whole planet that we're just now seeing in earnest. Unlike NASA photos, which are usually composites of multiple shots, the Elektro-L weather satellite's images display the entire planet in one ridiculously detailed take from 22,369 miles away. Why the trippy colors? Instead of just displaying Earth as-is -- real colors are so passé, dahling -- the satellite layers on near-infrared imagery that paints vegetation in wide swaths of rust-like orange.

You can get a peep of what a day-night cycle looks like for Elektro-L in the video below, and hop over to the sources to get an inkling of just how insanely detailed the images can be. You can also be slightly jealous of the satellite's network connection: at a minimum 2.6Mbps and maximum 16.4Mbps for bandwidth, odds are that it has faster broadband than you do.

Adobe changes tune on CS5 updates, won't seek paid CS6 upgrade to patch vulnerabilities

Things have gotten interesting in the world of CS updates. Recently, Computerworld reported that Adobe had informed folks using an older version of its famed Creative Suite -- CS5 and CS5.5, to be exact -- they'd have to shell out the CS6 upgrade fee in order to get a fix for some recently discovered bugs. Apparently, Adobe took notice to its customers' dissatisfaction and updated its initial blog post with a changed tune, stating, "We are in the process of resolving these vulnerabilities in Adobe Photoshop CS5.x, and will update this Security Bulletin once the patch is available." The same is true for both Illustrator and Flash. This kerfuffle started after Adobe handed out warnings for eight "critical" vulnerabilities found in certain versions of the three applications -- some of which are said to be exploitable and could potentially be used to "take control of the affected system." We'll see how it all plays out over the upcoming days, but in the meantime hit the links below to see if you need to take any action.

Justin Bieber has come out with a brand new single - and it's making every other son on the planet look terrible by comparison.

With Mother's Day around the corner, and with most young men out there calling in for your basic flower or chocolate delivery, this superstar has recorded an actual track for his parent, Pattie Malette.
